PUMPKIN AND TRUFFLE RAVIOLI

A tasty and refined vegetarian first course:
homemade egg pasta tortelli filled with baked pumpkin and truffle, on a light Parmesan cream.

The light cream is made from a root, kuzu, which in addition to being beneficial for our digestive system offers a unique texture and brilliance, giving the sauce a much lighter fat but very tasty flavour thanks to a 40-month aged Parmesan cheese.
