I love using beef raised in Tuscany, as we have good summer pastures. The recipe is perfected with low-temperature vacuum cooking, which makes the steak perfectly cooked with a beautiful even colour on the inside. It is then passed to the bbq to brown the crust and infuse the scent of wood.
